Ingredients of Quick Mediterranean Couscous

  1. You need of mushrooms, chopped.
  2. It's of instant couscous (about 150g).
  3. You need of tomatoes, sliced.
  4. Prepare of a jar olives, halved.
  5. Prepare of crumbled feta cheese.
  6. Prepare of Seasoning.
  7. Prepare of splash olive oil and balsamic vinegar.
  8. It's of salt, ground pepper, dried basil, rosemary, oregano, mint, sweet paprika, chili flakes OR mediterranean herb mix.
  9. It's of fresh basil leaves, chopped.

Quick Mediterranean Couscous step by step

  1. Heat some oil in a big pan or skillet over high heat. Add sliced mushrooms and fry until golden brown.
  2. Add about 3 cups of water to the same pot and bring to the boil. Then, add couscous.
  3. Next, cover with a lid reducing the heat to low until couscous is cooked (should take only a couple of minutes). Fluff up with a fork and take off heat.
  4. Add halved olives, sliced tomatoes, crumbled feta and seasoning listed above. Enjoy :).
